I've got it back together and running now. It was a long slow job, but has been well worth it. All the problems that I had before have gone, even the pinging.

I've done -
Head cleaned and faced, new exhaust valve guides, valve stem seals
All new engine seals including head gasket (except rear crank seal)
engine mounts
some cooling system hoses that were easiest to do while it was apart
fuel lines and eval purge vacuum line
timing chain guide

There were a couple of things that I was not aware of before the job -

The banjo bolts on the oil spray bar can very easily come in contact with the camshaft if you torque it too much, OR if you don't use new crush washers. That will then damage the bearing surface of the camshaft.

The oil pump has an over pressure relief valve. The valve is just a piston with a spring behind it that the oil presses against, until it reaches a releif hole. The piston has reasonably sharp upper and lower edges that can very easily dig into the bore that it runs in, causing the valve to get stuck in either an open or closed position. I chamfered the sharp edges a little. Fortunatley the bore on mine was only slightly damaged and the chamfering was sufficient to allow the piston to run freely.

I could not get the cam timing exactly right. The cam either had to be 1/3 of a tooth advanced or 2/3 of a tooth retarted, so I went with the advanced option. But I guess the only cause of this could be a well worn timing chain. Does anyone have any other thoughts on that???

Thanks to everyone helped me make the job as simple as possible.

i believe you thinking on the cam is correct, it was probably at the retarded position before. Usually advancing the cams will cause detonation or pinging, you might have that problem again as some carbon builds up.
