Does a performance chip (ECU) adjust (change) the ignition timing or only the air / fuel ratios? compared to a stock chip.

Yes, if a chip is done properly then it will probably have new maps for ALL variables (fuelling, igniton, and on some turbos the wastegate control valves) simply to optimise the settings - some parameters may not be different - depends on the engine etc. and how good the original data was.
However, a few years back in England, some aftermarket chips for Ford models from two apparently unconnected sources were compared .. found to be identical and one sued the other ... BUT it came out in court that both were actually identical to stock ... was then a police prosecution of both for fraud.

Was this the photo taken at the Eastern Creek day that I missed recently? I'm so bummed to have missed it. The last time I was there I was grid marshall for the Marque Motor Sport BMW v. Porsche day. I had a nice 'orientation' of the circuit in the marshall's E34 M5.
