Is it safe to disconnect the MAF sensor while the engine is running? Or should I disconnect it only when the engine is off?
If it is working, should there be any difference with it disconnected?

No problem at all. Usually, when you remove the plug, for 1-2 seconds the idle will drop and then it will run normal again, because the MOTRONIC goes to an certain default value for such a case. It will run richer. Just try and see what happens. I have done that very often on my 750.
BUT: you will have a fault recorded in your ECU system. So you need a PEAKE tool to reset check engine, or you have to disconnect the battery for half an hour to clear the system of faults = reset.
EDIT!: The result above is from my E32 750iL, which has 2! MAF's. So I am not sure, maybe if you remove the plug the engine might just stop.

I disconnected the MAF but there was absolutely no difference in how the engine run. MAF dead?

Did you drive or just in idle or just some revving?

I think mine is dead because it seems like somebody openned it before.
any damage to the engine from prolonged running in limp home mode?
