Quite often lately, with the car in park and idling the engine will quickly rev up and sometimes it just stalls or the rpm will come close to 300 almost dying then coming back to normal in a second.
Has anyone experinced something similar?

Start with Idle control Valve (ICV) but there is much else you should check as being clean and fully operational... but the ICV and vacuum leaks in the intake side of the motor are the most likey culprits. You may have a leak just started in an old hose or connection. Checking the ICV's operation is within spec is the first thing to do; see the Bently manual for the procedure and test ranges it needs to be within.

If it was the ICV or a vaccum leak shouldn't it act like that all the time?

smaller vacuum leaks are almost un noticable off idle. The idle circuit functions at idle, so will have little affect off idle. Check the ICV, its almost for sure the problem.
