My driver's door (UK spec) does not stay open, however, I've checked some of the posts here and noticed that it can cause damage to the door itself, however, the 2 torx bolts seem fine, as does the sheet metal of the door where they sit and the bar seems free enough. The door makes a loud clicking sound on opening (presumably as the 'stop' is being 'ridden over').Therefore my question is, can this be adjusted or would it need a new door brake (which isn't particularly cheap). ?

The door brake is actually pretty cheap. Even the one from the dealer. It's like 35 bucks maybe. I went in for the same issue, and they just needed to put in another little metal hinge bolt cylinder thing. Whatever it's called. It didn't cost anything but labor on that. You may not have the same issue, but it sounds like you just might.
