Does anyone know if there is any difference in performance, economy, insurance etc?
I actually prefer the saloon but have found a touring with the (rare) spec I want - Sunroof Aircon and manual box.

performance yes, the touring is heavier with a deeper rear gear. economy as well I am sure.
but the touring is the better looking & least common of the two.

The self-levelling suspension on the touring (if so fitted) can be more expensive to replace / fix, I believe.
The touring is obviously much more practical though, IMO.
Otherwise they are very similar I think, but can't comment on insurance.

My insurance is the same for both cars.
Saloon parts are cheaper and plentyful, the Touring unique parts can be a challange and expensive to find.
Touring is handy for oversize items.

my touring doesn't have the sunroof, and based on horror stories and high costs associated with sunroof repairs I'm glad I don't have it.
There's more than a few touring owners here who decided to just disconnect the sunroof
