Depends on where you are (sorta).
In some parts of Europe, I believe memory is hazy here, so I could be wrong), BMW sold a E34 540i Touring, with the 4.0L M60 engine, rated @ 282 HP
In the USA, BMW sold the 530i Touring with the 3.0L V8, rated @ 215hp, and the 525i Touring, rated @ 189hp.
So the biggest factory engine in the touring is (probably) the 4.0L V8.
The most powerful engine in the E34 Touring however, is the 3.8L S38B38 inline-6. This, of course, came in the E34 M5 Touring. It's engine is rated @340hp, but often bumped up to about 385hp these days. (as I plan on doing this summer).

M60 4.0l was the biggest / S38 3.8l was the most powerful. Of course, neither of those was officially imported to the US. The E34 Touring with the biggest most powerful motor imported to the US was the M60 3.0l with 215hp/214tq.

I'm trying to narrow down the actual model which has the "M60 3.0l with 215hp/214tq" engine. Is it the 530i Touring then?
Thanks for all your input fellas - beautiful cars by the way too. I'm very envious.

Yup, 530iT. There's even a nice one for sale here in my town. Can't find the link now, but it was on roadflea not long ago.

Best car I've ever owned.

pulls a neat little trailer. Pulled my 92 Sea Ray 200 last weekend just fine (albeit less than a mile from my house to the ramp, but it yanked it out of the water just fine...just had to be careful to back it in ssssllloowwwwly, cause the weight of the boat could have dragged the car in with it.)
makes a king air look real good.

Just remember, though: M60 = nikasil block. If that kind of thing matters to you, of course.
