I am curious to find out what water to antifreeze ratio you guys run in winter vs. summer if any difference at all. Also I am looking for suggestions for when I go to the track.
I use 50% or a bit more coolant. For track use plain water transfers heat better, there are also additives like Water Wetter to improve even further.
I have ocassion to work on real race cars and they all run plain water.

By plain water do you mean distilled?
If you are going to mix it and leave it in distilled is recommended. In the race cars it's whatever comes from the local tap.

Would that be ok/ideal to do on my car for the track?
Unless it's a dedicated race car just use a 50/50 mix. A well functioning stock cooling system is adequate.

I use 50/50 here and it gets to be -40 C in the winter, don't have any issues.

NO No No, you don't want to be using spring water in your cooling system at all, its full of disolved mineral deposits which will cake up your cooling system
Distilled or tap water please

Wouldn't tap water have the same spirits in it as the spring water?
