i have just bought some lowering springs and have had them fitted on my 1990 518i by 40 mm. my wheels are 18inc m5 rims with tyres 235/40/18 all round after having my car lowered the car is still sitting too high i have been told that that the only springs i can buy are for a 40mm drop which i have already done and that if i want the car lower then i should cut the springs please advise because i dont want to risk anything without proper knowledge.

Cutting them is less elegant because the coil shape is not consistent, so you'd end up with the end of the spring not seated properly in the strut tower. Somewhat more dangerous - will it kill you? Don't know. :)
Maybe you just need to install some lead weights in the engine compartment?

cut the **** outta them!!!!!!!!!
just kidding, they will settle after installation and will then show you their height. immediatly they will stand tall.
